Yummy Potatoe Casserole

This is a favorite from when we were first married and I am making it for supper tonight. On a cold and rainy day this just seemed to be the meal to make.

4-5 average sized potatoes
2-3 carrots
1 pound ground beef
1/2 soup can of 2% milk
1/2 soup can of Chicken Stock
1 can cream corn
1 can cream of chicken soup
1/2 cup of any kind of shredded cheese (we prefer Colby)

1. Peel and cube the potatoes and carrots and set aside in a bowl.
2.  Fry with ground beef with some salt and pepper
3. Spray the inside of a casserole dish and then add the cooked ground beef, the potatoes and carrots.
4.  Pour the soup, cream corn, milk and chicken stock into a bowl and whisk till blended.  Then pour over potatoes and ground beef.
5.  Stir all together and top with cheese.  I usually add more cheese and stir it into the casserole then add some cheese to the top.
6.  Bake in the oven at 350 degrees for 11/2 to 2 hours, checking by poking with a fork to see if the potatoes are soft.

Oh and remember to add LOVE!!

Pickle Wheels or Pickle Dip

I just love these quick yummy appetizers. 1 jar of dill pickles 1 8oz block of cream cheese (room temp) 1 package of Black Forest Ham ( I use Great Value) Spread cream cheese over pieces of Ham.  Roll a piece of ham over a pickle spear and then slice.  Super super easy Right?? Another version is to make this into a dip.  Cut pickles into bite sized pieces, cut ham into chunks.  Whip the cream cheese until it is creamy and add the pickles and ham.  Serve with veggies or crackers.  Super easy and super yummy either recipe you prefer.
