Sweet and Sour Meatballs

Make Meatballs and bake on a cookie sheet 1 1/2 lbs ground hamburger 3 eggs 1 tsp dried onion 1/4 box (1 sleeve) soda crackers crushed up salt and pepper to taste 1/4 cup ketchup mix up all together and roll in to small balls and bake on a cookie sheet for 20 minutes at 350 degrees. The Sauce is: 1 can of Chunk pineapple include the juice 1/4 cup ketchup 1/4 cup taco sauce or hot sauce 1 cup sugar 1/4 cup grape jelly 1/2 cup vinegar 1 Heaping TBLS cornstarch Mix all ingredients together until thick Pour sauce over meatballs and put in crock pot on low. This is a perfect appetizer for parties!! This is my mom's recipe and I have loved it since I was a kid.

Rocky Road Candy

We Love this Candy and I have been asked for the recipe on several occasions. It is actually my mother in law's and I have tweaked it a bit to kinda be my own. 1/2 cup Butter 1 Cup Chunky Peanut Butter 1 6 ounce package of Butterscotch chips 1 6 ounce package of Chocolate Chips (semi sweet) 10 ounces of mini marshmallows **peanuts (as much as you desire) I usually add about 1/2 cup to 3/4 cup** (I don't always put peanuts in as many times the Extra Chunky Peanut Butter is just as good) Melt all ingredients except the marshmallow's in a heavy saucepan. Allow the mixture to cool for awhile and then add the marshmallow's. Put into a greased 9 X 9 pan, however I like to use a greased 9 X 13 pan (depends on how thick you like your bars). Then put in the refrigerator. Super Yummy!!

Cucumber Onion Dip

1 package of Cream Cheese (8 ounces) 2 large cucumbers chopped (finely), seeded and peeled 1/4 cup Onion chopped (finely) (I use less) or I typically use Onion Powder and just sprinkle desired amount in. 2 Tablespoons of Mayonnaise or Miracle Whip which ever one you prefer 1/8 tsp or a bit more if you prefer of garlic powder 1/8 tsp salt (I use sea salt) 1/8 tsp pepper In a small mixing bowl combine cream cheese, cucumber, onion, mayo, salt, pepper and garlic and beat until well blended. refrigerate until ready to serve. (I usually double this recipe when I am going to serve crowds larger than 12) Serve with any cracker you prefer. I really like it with the Wheat Thins Tomato Basil Crackers. Enjoy.

Chocolate Berry Trifle

What's Needed: Brownies 2 Tubs of Creamy Cool Whip 2 Packages of Chocolate Instant Jell-O Pudding 2 1/2 Cups Milk Raspberries, Strawberries or Blueberries (any kind of berry that you prefer) For the Pudding Mixture: POUR: 2 1/2 cups milk into large bowl and add 2 packages of Jell-O instant Chocolate Pudding. BEAT: with wire whisk until WELL blended. MIX: in 1 tub of cool whip (thawed) with the pudding until WELL blended. For the Brownies: I usually use what ever brownie mix is on sale and bake according to directions, however I buy the fudge kind and before I bake the brownies I take Carmel topping and I squeeze over the top of the brownies and then take a knife and swirl. Then bake according to the box. Allow to cool and then cut into cubes. LAYER: in a trifle bowl brownie cubes, pudding/cool whip mixture, berries, brownies, pudding/cool whip mixture, berries, etc until you get to the top then add the additional cool whip tub and garnish with extra berries. note: I use t...

Peanut Butter Cheese Ball

This is a great treat for kids and us moms as well!!! 1 package (8 ounces) Cream Cheese, at room temperature 1 cup powdered sugar 3/4 cup creamy or chunky peanut butter (it says not the all-natural kind) 3 Tablespoons Packed dark brown sugar 1 1/2 cups (9 ounces) "swirl" milk chocolate and peanut butter morsels (I use the whole bag of the "swirl" milk chocolate and Carmel morsels). Graham Cracker Sticks and/or Apple Slices **Beat cream cheese, powdered sugar , peanut butter and brown sugar in large mixer bowl until blended. **Spoon onto a LARGE piece of plastic wrap; bring up all four corners and twist tightly to form a ball. (I then place into a freezer safe bowl with out a lid to remain in a ball shape). **Freeze for 1 hour and 30 minutes or until firm enough to keep its shape. Place morsels in flat dish. EASY rolled Sugar Cookies

1 package Betty Crocker SuperMoist White or Yellow Cake Mix 1/2 cup Shortening 1/2 cup butter, softened 1 teaspoon vanilla, almond, or lemon extract (which ever you prefer) 1 egg Sugar 1 tub ready to spread frosting your choice. . . or make your own. We like Cream cheese kind around here. If I buy it or if I make it it doesn't matter as long as it is Cream Cheese 1. Heat oven to 375 degrees. Beat half of the cake mix, the shortening, butter, vanilla, and egg with electric mixer on medium speed until Smooth. Stir in remaining cake mix. 2. Divide dough into 4 equal parts. Roll each part 1/8- inch thick on lightly floured surface. Cut into desired shapes; sprinkle with sugar. Place 2 inches apart on ungreased cookie sheet. 3. Bake 5 - 7 minutes or until lightly brown. Cool 1 minute and remove from cookie sheet to wire rack. Whip frosting with electric mixer until fluffy. Spread of frosted cookies and decorate as you want. Chicken Enchilada Soup

2 Cans Cream of Chicken or Cream of Mushroom Soup 1 Can of Fiesta Nacho Cheese Soup 1 Can of cheese soup 2 Cans of Enchilada Sauce, Mild 2 Soup cans of milk and I usually end up adding more as it cooks :-) Cut up cooked chicken or turkey as much as you like Flour Tortillas Mix Soups, sauce, chicken and milk. heat on low heat. Do NOT boil. Stir OFTEN so it doesn't stick to the bottom of the kettle. Cut the flour tortillas with a pizza cutter and place them on a cookie sheet and put them in a 325 degree oven for 15-25 minutes until toasted salt alittle bit once they get out of the oven. Serve the tortillas with the soup in the bottom of the bowls.
